Ingredients
- 1 sirloin steak
- Salt & black pepper
- 1 tbsp high-heat oil (tallow, ghee, or avocado oil)
- 2 tbsp unsalted butter
- 2 garlic cloves, smashed (optional)
- Fresh thyme or rosemary (optional)
Instructions
- Bring to room temp
Remove steak from the fridge 30-45 minutes before cooking. - Preheat pan
Heat a cast iron skillet over high heat until very hot. - Season generously
Pat steak dry, then season both sides with salt and pepper. - Sear
Add oil to the pan. Place steak in and sear 3-4 minutes per side, depending on thickness. - Butter baste
Reduce heat slightly. Add butter, garlic, and herbs. Tilt the pan and spoon butter over the steak for 1-2 minutes. - Rest
Remove from heat and let rest 5-10 minutes before slicing against the grain.
