Simple Grilled Picanha

A classic, no-fuss way to enjoy one of the most flavorful cuts and is perfect for slow evenings and shared meals. Picanha is known for its rich beef flavor and signature fat cap, which naturally bastes the meat as it cooks. With just salt, heat, and a little time, it becomes something truly special.

Ingredients
- 1 whole picanha
- Coarse salt (or salt & black pepper)
Instructions
- Slice into steaks
Cut the picanha into 1½-2 inch thick steaks with the grain. (You’ll slice against the grain after cooking.) - Season
Pat dry and generously salt all sides. - Preheat grill
Set the grill to medium-high heat. - Sear fat side first
Place steaks fat-side down and sear 3-4 minutes until the fat begins to crisp. - Flip and cook
Turn and grill another 4-6 minutes per side, depending on thickness, rotating as needed. - Check doneness
Pull at ~125°F for medium-rare (rests to 130-135°F) - Rest and slice
Rest 5-10 minutes, then slice against the grain into strips before serving.
